THE PROCESS STEP BY STEP
How to prepare a good gin and tonic by Javier Ubeda, owner of the three Úbeda establishments.
Javier Ubeda alma mater of Úbeda, sculptor and obsessed with perfection of gin and tonic, explains how to get the top beverage.
1 – Use a balloon glass to fit the nose. Tube glasses are banned in Úbeda, as they kill the pleasure of smell.
2 – The ice should be at -20 º C, made with mineral water. In Úbeda we always use 5 cubes, purchased from a supplier.
3 – The raw material (gin, tonic, ice and lemon, plus seasoning) must be of the highest quality.
4 – The proportions are vital: the flavor should not take precedence of the tonic nor the gin. Thus 5 cl of gin, 5 ice and the rest tonic.
5 – We take off the excess of gas of tonic with a gentle tap on the bottle.
6 – Never cast lemon: peel only. As in the grandmother’s recipes confectioneries, what we want is the perfume of lemon, not its acidity. To do this we remove even the white part which is bitter.
7 – If we are ultra-perfectionists, use the Úbeda roller, soon to be sold at its stores, to remove all the scent of lemon peel.
8 – And here’s the key point: it must be taken in good company.
